UCLA Dining Services
I worked in the Nutrition Education Department of the self-operated UCLA Dining Services. Here are some samples of work done for the University, which feeds UCLA students, faculty, and staff.

Ingredient Inventory In 2013, UCLA opened its newest residential restaurant: Bruin Plate. Bruin Plate focuses on fresh, wholesome, nutritionally-balanced dishes. Local and in-season whole foods are utilized, and a wide variety of fresh produce is utilized. During the trial phase, I noticed that many students were unfamiliar with the vegetables used in the dishes. To address this, I created the following database of seasonal and exotic ingredients. This educational document was available online to all the students and staff at UCLA. Table Tents I created information sheets that were displayed on the tables in all of the five UCLA residential dining halls. To the left are two samples; other topics included legumes and whole grains. Beverage Rankings In 2014, UCLA reviewed its contract with Pepsi and considered contracting with Coke. In order to assist with the decision-making process, I compiled a ranking of the relative nutritional content of beverages of these companies. I then presented the findings to a committee. |
